The filled pasta cooks in four to seven minutes (depending on size) in water that is just off the boil.
Bring salted water to the boil, and when properly boiling turn the heat low. Put in the pasta, and time. When cooked, scoop the pasta out of the water onto the plate. It is important that the water does not come back to the boil, as this can damage the pasta.
The tradiotional way of eating filled pasta is with a dressing of butter and sage. Just melt some butter (make sure it does not brown) and add the whole sage leaves. Leave for a couple of minutes. When the pasta is on the plate, drizzle the butter over the pasta.
